How did you get into the butcher business? I was trained by my brother Philip Armstrong — we both had farming experience, and watched our father butcher lambs on the farm.
If you had to choose, what would be your favourite cut of meat and why? Rib eye on the bone. So much flavour brings out the carnivore in me. Seared on both sides; a little salt and pepper for seasoning.
What will make you the winner at the Butcher Wars? Have you been doing anything to prepare for the comp? Passion, commitment, experience. I have been practising every day for 22 years.
