How did you get into the butcher business? Apprenticeship at my local butcher in Greystanes in 2006 and have been butchering since. Last year my wife and I decided it was time to give back to the community and we opened our own business in Sep 2014 and are now in the process of opening our second store.

If you had to choose, what would be your favourite cut of meat and why? Pork chop — flavour, texture, high in proteins and irons and it is a versatile product.

What will make you the winner at the Butcher Wars? Have you been doing anything to prepare for the comp? Experience, creativity. Preparing and practicing different techniques and working on my speed and attention to detail and uniqueness.

Which bands/artists are you keen to catch at Meatstock? Will be great to see a bit of all of them.

What else are you looking forward to at Meatstock? Food, networking with other butchers, showing off my skills.
