How did you get into the butcher business? I got into butchery with a common story, a part-time job after school which progressed into an apprenticeship. From that I have worked in wide aspects of the trade from processing plants, wholesale rooms and retail stores throughout Victoria and into the wilds of Canada.
If you had to choose, what would be your favourite cut of meat be and why? I asked an apprentice this question once, the answer I received was "prawns". For me though, my go to would be inch-thick lamb forequarter chops. Simple. Delicious.
What will make you the winner at the Butcher Wars? Have you been doing anything to prepare for the comp? Butchery is the real winner right? It is great to see organised competition and promotion of the craft to show where this industry is and the direction we are heading. I am looking at it as more of a bit of fun rather then a contest.

Which bands/artists are you keen to catch at Meatstock? I am looking forward to see Bullhorn on stage. I hear they put on a good show. Also, it would be great to see The Delta Riggs again.
What else are you looking forward to at Meatstock? Looking forward to sinking my teeth into some of the best BBQ in Melbourne. Also, checking out the selection of knives made by Aidan Mackinnon from Cut Throat Knives.
