How did you get into the barbecue business? I pioneered BBQ in Melbourne in 2011 with Big Boy BBQ after falling in "obsession" with Kansas City BBQ in 2009. I have done several BBQ road trips to the USA and wrote the award-winning, best in the world cookbook, Temples Of BBQ in 2015.
What's your signature dish? Kansas City-style BBQ.
Can you let us in on what you're bringing to the BBQ Wars? We have recently won first in brisket, chicken and steak at the KCBS competitions, we are bringing our best meat and have amazing baker's oak and pecan wood that we are smoking with in our custom Yoder Cimarron offset trailer.
