How did you get into the barbecue business? I'm from a country city in Brazil, and that's what we do on the weekends, and sometimes weekdays as well. When I came to Australia back in 1999, I started working in many different BBQ kitchens around Sydney.
What's your signature dish? [I] don't have just one.
