How did you get into the butcher business? I started when I was 15 as a wash up boy. I always sat in my parents garage sharpening old knives. I got offered an apprenticeship in 1999 and have never looked back. I love the challenge; you never stop learning. l'm now the manager at Wiggly Tail butchery.
If you had to choose, what would be your favourite cut of meat and why? Pork shoulder. It is so sweet and tender, you can do so much with it.
What will make you the winner at the Butcher Wars? Have you been doing anything to prepare for the comp? I already feel like a winner just having this opportunity… plus some good old fashion butchering with attention to the details.
