How did you get into the butcher business? I have been in the industry for the last 15 years working in a range of gourmet shops to mass production abattoirs. This year I have joined the team at Merredin IGA to bring a fresh and new look to the supermarket and promote our quality meats.

If you had to choose, what would be your favourite cut of meat and why? I don't have a favourite cut honestly, I just love meat.

What will make you the winner at the Butcher Wars? Have you been doing anything to prepare for the comp? I am keen to show Melbourne what a small town butcher from a country owned supermarket can do. And I plan on making up for last year at Sydney and walking out with the cleaver.
