How did you get into the butcher business? As a teenager I took cattle to shows and I had a real interest in what happened to the animals after the competitions. It seemed a natural progression to follow the carcasses all the way through from the paddock to the plate. 

If you had to choose, what would be your favourite cut of meat and why? The beef blade is my favourite and is one of the most versatile and underestimated cuts of meat. Its great for BBQs, roasts, casseroles and so on.

What will make you the winner at the Butcher Wars? Have you been doing anything to prepare for the comp? I believe in quality over quantity and like to think of each piece of finished meat as my work of art. I have a true passion for creating new cuts and treat each day as a new opportunity to enjoy my passion.
