How did you get into the butcher business? I started off as a cashier at the age of 13 working after school and on the weekends, decided after my school certificate that butchering was something I was interested in and wanted to learn. 10 years later and still love the trade!
If you had to choose, what would be your favourite cut of meat and why? I can't go past oyster blade, it's my new found favourite! Oyster blade is an all round cut of beef perfect for the BBQ and even casseroling!

What will make you the winner at the Butcher Wars? Have you been doing anything to prepare for the comp? I've definitely been practicing with time trials in my preparation leading up to Meatstock. I believe there is some great butchers competing. On the day I'm hoping I do exactly what I've been practicing and the judges love what I present and the creativity I've used.
Which bands/artists are you keen to catch at Meatstock? The Beards! They're awesome.
What else are you looking forward to at Meatstock? Eating as much slow cooked food as I can, watching other competitors and events, trying to track down Tuffy ;) Everything! I'm so excited for Meatstock.
