How did you get into the barbecue business? Like most people it started out watching shows like Man Vs Food and BBQ Pitmaster followed by two trips to the US, then it was all downhill from there. That was six years ago now and we are just getting more and more serious about our BBQ.

What's your signature dish? All of them, but if we had to pick one lamb ribs would be up there with our 7 Sins BBQ rubs and sauce.

Can you let us in on what you're bringing to the BBQ Wars? We are bring our A game and then some; the plan is to go and win. Watch this space, our seafood will be on point and nothing like the judges have seen before.

Which bands/artists are you keen to catch at Meatstock? Anything with a banjo in it — it brings out the best me.

If you could feed any band/artist playing at Meatstock who would it be and what would you serve them? I'm easy, I'll feed anybody if they are hungry.

What else are you looking forward to at Meatstock? Getting in and competing against some of Australia's best pitmasters and even a few Americans. Also having a lot of family and friends coming to watch us on Sunday taking the win.
