How did you get into the barbecue business? Like most good folk, I got into it by watching all those awesome American food shows and then by taking a few trips to the USA.

What's your signature dish? Brisket - Jack's Creek give me the best beef in Australia and it wins.

Can you let us in on what you're bringing to the BBQ Wars? I'm bringing my clippers - it seems most people have forgot how to shave! Looking at you Tony G. Might also bring something a little bit special, but that's a secret for now.

Which bands/artists are you keen to catch at Meatstock? Hillbilly Wes, that's all I need to see.    

If you could feed any band/artist playing at Meatstock who would it be and what would you serve them? Are Skrillex or Alex K coming? I would feed them. These other people, I don't know who they are.

What else are you looking forward to at Meatstock? I'm looking forward to winning, that's it — win at all costs, 2nd is first last.
