What's your bar's specialty drink? Our cocktail speciality would have to be the Silk Route; it encompasses everything of what we are about. It's made with fresh, lively flavours.

What drink turns you off? To be honest, nothing, but if I have to choose something then a mocktail – put some grog in that!

What makes your bar different? Where to start? I guess the biggest difference is our loud upbeat bar atmosphere in a restaurant with amazingly friendly service and great quality food and drinks.

Who will I meet at your bar? We get a lot of locals that live around the area. During the week a mix of locals and corporate workers dine at the restaurant, and on weekends we see a lot of groups of all ages letting their hair down and soaking up the atmosphere!

What's the design/atmosphere of your bar? The Botanist's name references illustrious Botanist Gerard Fothergill who travelled the world researching plants, and whose last years were spent running a small bookshop in the building the restaurant now occupies. The Botanist pays homage to these historical and botanical themes of exploration and discovery, creating food and cocktail menus using abundant offerings of fresh produce, herbs and spices and the décor mimics the leafy suburb of Kirribilli with wooden bench tables, overflowing plants and quirky antiques around the bar.

Who is pouring at your bar and what makes them special? Lachy Sturrock heads up the bar team at The Botanist. He is fully responsible for the creation of the Summer Drinks Menu. It's as sexy as he is really...

Best hangover cure? It's hard to get motivated after a big night out, but a good run to sweat it out always helps. However, if that doesn't work then the hair of the dog to take the edge off – go a cider for the sugar kick.
